32 | SUMMER 2026 EDIBLE CENTRAL OREGON Lavender Honey Lemonade By Megan Westerberg | Photo by Cait Pearson Makes 7 cups INGREDIENTS 1 cup lemon juice (approximately 5 lemons) 1 tablespoon lavender buds 8 ounces honey INSTRUCTIONS Place lavender buds in a tea strainer and immerse in hot water for 30 minutes to make lavender tea. In a separate container, mix 1 cup honey with 1 cup hot water, stirring until the honey dissolves. Combine the lavender tea and honey water in a pitcher. Add the lemon juice and top with 4 cups cold water. Stir well and chill before serving. Serve over ice. For a sparkling version, add a splash of soda water, or add gin or vodka if desired.
